Apple Watch Ultra can do a new trick

With the release of watchOS 11, the Apple Watch Ultra gets a neat trick. A single click still starts the assigned action (in my case, workout), and a long press still brings up the siren, medical ID, compass tracking, and the SOS button. However, there is now a step that happens between a single click and a new press. The video shows the new feature in action, allowing you to choose between actions by finger selection or turning the Digital Crown:
